Wood Fire Brings Out the True Flavor of Each Ingredient

Chef Kinjo, who leads the KOS kitchen, cooks authentic wood-fired cuisine, using nothing but wood at every stage of cooking.
Spices and herbs are kept to a minimum, letting the natural flavor and aroma of each ingredient take center stage.
Because we value local sourcing and seasonality, the menu changes character with what's available on any given day.
To keep the smoky character of the wood from lingering too strongly, a light palate-cleansing dish is served between courses, so you can enjoy every bite through to the end without tiring of it.
With full ventilation and air conditioning in place, you can take in the atmosphere of a wood fire without any smoke drifting into the dining room.

Rich, healthy beef raised on feed enriched with wine lees. Cooked medium as standard, with rare-to-well-done available on request, and slow-roasted over a wood fire.

A prized branded fish from Yamanashi Prefecture, served mi-cuit (lightly seared, half-raw). Its rich, high-quality flesh is brought out through delicate cooking.
